Hadassa’s Chicken and Dumplings
*Please note that a lot of these measurements are approximate. I tend to just throw things in till they look right*
1- 1 ½ lbs. chicken: cut into about 1”x1” pieces doesn’t have to be exact. ( I like thighs)
Oil for pan*
1 white or yellow onion diced
2 med – lg carrots diced
3 ribs celery diced
2 c. fresh sliced mushrooms (optional)
1 qt. chicken stock
4 cloves crushed garlic
4 cloves finely minced or grated garlic (all hail the microplane!)
2-4 tbs. flour
2 tbs. (or so) dried thyme
Salt and pepper to taste
The Dumplings (courtesy of Alton Brown):
9 1/2 ounces all purpose flour, approximately 2 cups**
2 teaspoons baking powder
1 teaspoon kosher salt
1/4 teaspoon baking soda
2 ounces butter, cut into small pieces and chilled
1 cup buttermilk***
2 Tbs. or so dried parsley
Notes:
* If you buy bone in thighs with the skins you can remove the skin to render the fat for this recipe (and then you get to eat the yummy, crispy skins). It adds extra flavor, but is not necessary. Any cooking oil will work or bacon for smoky flavor.
**Gluten free alternative for thickening recipe: tapioca starch. For the dumplings: Equal parts brown rice flour and tapioca starch + 1tsp xanthan gum. Xanthan gum will be available at the demo.
*** Buttermilk can be substituted by adding 1tbs. white vinegar to 1c. warm milk and letting it stand for 5 min. Vinegar will be available at the demo for those who don’t want to purchase buttermilk, but have milk on hand.
